Winemaking: Manual harvesting in crates, pressing of the grapes, indigenous foot inoculation and fresh fermentation. Cooling of the must before the end of the fermentation and ageing on the yeasts over the winter. Bottling in the spring of the year following the harvest without dosage. Prise de mousse with spontaneous depletion of the grapes sugar.
Ageing in bottle for one year.

The fineness of L’Antica Quercia wines is the result of attention to details. Not only being organic certified, the winery started adopting biodynamic practice from 2017. They use native yeasts to ferment their base wines and vinify the base wines by separate plots in different tanks. The wines are naturally stabilized in winter with a minimal use of sulphites.
